Eating disorders such as anorexia and bulimia certainly are a form of self injury in the larger looser sense of the word. However, technically, it is not a form of self injury. It is not part of that definition. That said, however, a very large proportion of kids who self injure will also have an eating disorder, and kids who have an eating disorder, you might want to ask whether they injure. Because there is also a very high likelihood that they are engaging in both behaviors at the same time.
