When you start your baby on solids, one of the food groups to avoid are the dark green leafy vegetables, such as spinach and kale, brussel sprouts, broccoli, and carrots are in this category if they are home prepared because they have naturally occurring high nitrates. Nitrate poisoning in our infants is virtually non existent due to the universal protocol of diluting commerical baby foods. But if you are making your own foods, you do want to be aware that you need to puree the food and then dilute it with one or two tablespoons of fresh spring water per serving. This lowers the risk of any problem with the nitrates. Waiting until your baby is eight months of age is another option, which really virtually eliminates the problem of nitrate poisoning in the infant. By eight months of age, the liver is mature enough to be able to handle these vegetables in combination with other vegetables and proteins as part of the baby´s regular diet.
