What are the statistics on the increases in food allergies? You know, as I really poured my analytical capabilities into that, it was absolutely jaw-dropping to see how prevalent food allergies have become. Today, it is now estimated that 1 in 13 children has a food allergy. Most kids that have food allergies have multiple food allergies. There was a doubling of the peanut allergy from 1997 until 2002, and in 2008 the CDC reported a 265% increase in the rate of hospitalizations related to food allergic reactions. So, that was people checking into the ER, and not just children. And when you stop and think about it, you know, when we were kids, a PB&J or a carton of milk, they were not loaded weapons on a lunchroom table as they are today. And so it just begs the question, "What has changed?" And while correlation is not causation, the fact that we have introduced new proteins into our food supply at the same time that we are seeing these skyrocketing increases in these epidemics, it begs the question, "Why weren't we told?"
